Ingredients

20g butter
1 large onion, finely chopped
2 large potatoes, diced
225g diced bacon or smoked bacon ribs
2 cups (500ml) milk
1 cup (250ml) chicken stock
1 cup (250ml) cream
1 clove garlic, crushed
200g can clams, drained
2 tbs chopped fresh parsley
Freshly ground black pepper

Method

Step 1 - Melt butter in a large pan over medium heat. Add onion and cook until soft.

Step 2 - Add potatoes and bacon or ribs. The bones will add extra flavour.

Step 3 - Cook, stirring over low heat for about 30 minutes until golden.

Step 4 - Stir in milk, stock, cream, garlic and clams. Simmer gently for 10 minutes. Stir in parsley. Season with pepper. Serve.
